Compare what a finite sample can and cannot do. In Rule 30, I can compute the center column for billions of steps and see no period. That rules out short periods, but it cannot rule out a period of a trillion steps, because a proof must cover all n and an observation covers only the n I checked. One counterexample can disprove a universal claim; no finite pile of confirmations can prove it. Octopus experiments differ in kind: they sample a noisy, living population, so you are estimating a probability and its uncertainty, and the claim is about likelihood, not certainty. Phrase it this way: a proof says "for every case, necessarily"; an experiment says "in the cases we sampled, under these conditions, this is what we saw, and here is how sure we are." Both are legitimate. They answer different questions, and the error comes from reading the second as the first.
